As part of a new ‘concept’ for this national hotel chain, Cabbola were involved in producing a new front of house servery area, new Bistro restaurant and altering the location of the existing cooking and wash-up areas.
The new concept for the main dining room was for ‘Live Theatre’ cooking to the servery, including a full sized Chinese Wok, Char-Grill and a Griddle Plate. This coupled with the self help salad and dessert counters created a highly successful dining concept for the hotel.

Timescale:
Due to the hotel being unable to close completely, the various areas opened on a phased in basis with the contract running over a two month period.
